I'd highly reccommend the OS21XM outboard. For a stock motor, they go hard with the right prop. They also have the best leg and propshaft in the business - period. The only internal mod needed is to remove a head shim. The problem you might have with the CMB powerhead on a K&B 3.5 leg is the K&B propshaft assembly just can't handle it for very long. They wear out really fast. Flex cables can be an issue too. Fortunately Kris Flynn makes some fantastic replacement cables and is a local for you.
There are loads of good hulls to choose from. What I's say to you is decide whether you want to go with a tuned pipe arrangement or stick with a stock type motor like the OS. Some hulls are great with one type and not so great with the other. Don't be put off by "stock" - the OS motor is capable of going very well. Very reliable and consistent too.
In wood - the VillainS1 or Aquacraft VS1 works really well with Stock OS or K&B power. In glass there is a fair amount of choice - the Lynx, Vision, HTB290, Sniper/cobra, Aquacraft TS2 or TS3 (when it becomes available) would all be suitable choices. If you have to go with a piped engine and want to go fast - figure on one of the glass hulls mentioned.
I've run most of them and reckon you can't go wrong with a VS1 and OS. They come with linkages / fuel tank etc. too and aren't a tight fit like some of the other hulls radio boxes. Not the fastest, but fast enough to beat some expensive set-ups, and very reliable. You could start off by putting your K&B on the VS1, then switching to the OS once the old motor dies. That should help with the initial outlay too.
