I could write paragraphs with all the options.
A lot will come down to what RPM and prop will work well on the hull.
You can go for crazy torque, insane RPM or a balance of both.
If it was me and cool factor was important I would stick a Lehner 4140 outrunner on the top. Tons of torque and RPM a little higher than a gas motor making them easy to prop. Since it is exposed air cooling is easy, but they also water cool the stator from the inside. I have build several riggers and mono's with these motors and love them. Sound is amazing too. I have a couple videos of them. Size wise they pack the most punch.
Scorpion also make some outrunners, but the quality is not nearly the same.
Other good options are the TP56 series, a 5660 would probably be a sweet spot for size and power.

If you by a TP, just get the standard version. Do not buy the CM, SVM, etc.
The Tenshock 5360 is a step above the TP 56 series. These are 8-pole instead of 6 like the TP. More torque. Very high quality.

They have shorter and longer versions like TP if you want lower weight with a shorter motor or more power with a longer one.
Another great option is the Castle 2028 motor. Hard to beat the XLX2 hydra ESC and Castle 2028 combo on 8S.

Your best option is to convince Ric "Mr. Carolina Tunnel" Wally that he needs to build a big tunnel so I can build him a cool power system.
