Been using 2s LiPo packs in my gas boat radio boxes, and transmitter, but have heard a Li-Ion is a better option.
What are some of the pros and cons of each? Are Li-Ions more stable and less fire prone? Do they have more power, etc? Do they need to be put at a storage charge when not in use?
What Li-Ion packs and chargers are best?

They both are good choices. li-ion batteries are more robust than lipo. Both should be storage charged for best results. That said none of your cordless tool chargers have a storage mode and all are li-ion powered. I personally run li-ion in most boats. I still have a few that don't have HV servos so those have LIFE packs. Most chargers will charge both
 
Life packs are proven safe, have excellent storage capability and work great at 6.6 volts can be used with most any receiver and servo
