If your boat is flighty as it sounds its probably make lots of demand spikes asthe prop loads and unloads. the castle are rated at 125 and can do close to 300 on spikes, same for the schulze and yge spikes of 50% over the constant rating wont hurt - after that tho .....
The fuse is a new one - if you ahve been running it an not having problems I imagine you coudl take it out. A data logger is a more certain way of ascertaining the actual performance of packs - esc - motors.
