I have a K&B 65 engine that I have on my plane. My question is can I change the head on it over to a water cooled head to put in a RC boat?

Probably won't work very well. The airplane engines are usually crank induction, and the port timing numbers are fairly conservative (except the ducted fans). The RPM of the aircraft is often about only 60% of the boats. It may work for a play boat, though. Your best bet would be a used K&B marine if you want to play, or one of the higher performance engines (CMB, MAC, Picco, OPS, and maybe Rossi) if you want to compete.
