Got out this afternoon and gave it a go. About 1/2gal of fuel though the engine so far. No killed plugs. Put it in the water a total of 3 times and it got a little better each time, plus it drove back to the dock all 3 times. Going to tweak on it some and try again soon. Here is the video of the second time in the water.

I’ve started using aircraft quality stainless shcs or black oxide in order to be able to tighten them up enough to keep the collars from moving.

We had a similar problem, moved the rudder closer to the transom to get it away from the prop and it ran a lot better.

Buckshot are you running any toe on the right sponson? Might try some if the all else fails.

On our JAE45 as soon as the pipe hit the boat would pull hard right, sponson angles were good, nothing was out of wack, other than the driver!
That's when we decided to move the rudder in tight to the transom, all good after that.

I had the boat set up square with no toe in.
First run the boom collars came loose and the front sponsons were moving all over the place while on the water.
Second run I squared it back up and also change from a plastic servo horn on the steering servo to an aluminum one, got better (see video above).
Third run I added 1/16" toe to the front and switched to an ABC 2217, was even better until I found some trash in the pond and nicked the rudder and turn fin. Working on it this morning and hope to try again this afternoon.
