Can anyone help me with motor to use, speed control and batteries.

I am looking to build a boat that had a top speed capability in the 115 MPH range.

one Dollar less of Tylers prize and i will talk to Ralf Moser ,currently holder of the monoworldrecordboat to sell you his boat . So you will get close to your wished topspeed. Maybee Tylers boat is faster but i am cheaper .
