How do you determine what size motor to use in any given hull? I have a 30" cat I want to convert.
 
Honestly the best way is to get recommendations from experienced FE boaters. Let us know whether you want the boat for sport running, racing or SAW's. What kind of speeds you're looking for and what hull so we can get an idea what batteries would fit.

For a good moderately priced generic set up, I would go with a Leopard 4074 2200 kv motor using two 4S packs in parallel and a Turnigy 180 Speed controller. I would start with a 442 prop. Don't know if two 4S packs will fit in your hull though. They will fit in a Aeromarine Mean Machine.

Cool. The MM makes a great little FE. She will have way better performance over the 18. I built one for my son a few years back. Don't know what strut setting works for the nitro motor but most FE's are running 3/16"-1/4" up and neutral. A CG of about 9.5 will get you in the ball park. Like I said, start off with a detounged 442 and everything should stay nice and cool. If you decide to go larger (M445), be very care full of heat. You'll have to start off with short runs of a minute or two and bring her in to take temps on the motor, ESC and battery. If temps are 120's or less, you can try running her a little longer on the next run. If you are in the 130's you are approaching the danger zone. 140+ and you need to prop back down.

Leopard 4074 2200kv is a good/affordable choice for this boat.To answer partially your question here it's what I decided to use for a gas to Fe convertion ...Aeromarine 42" with a Leo 5692 1090kv as the customer wants just a playboat .His first boat a sprintcat 90 was built with a Topower 5682 1700kv and it outruns most of the gas cats so now we opted for a bigger motor and I'm confident it will also run good.Gill
