Where can I get info on motor sizes and kv rating?. Like a beginners book.

Unfortunately it's hard to pick a motor solely based on manufacturer's numbers. Some less scrupulous companies shall we say fudge the numbers so you may not be comparing apples to apples. The numbers also don't indicate the quality of the components being used or the motor efficiency. That being said, Neu motors are expensive but they have never let me down. I use the same chart that Mic provided a link to. For help choosing a motor size and KV, your best resources are the good people here on IW and on Offshore Electrics.

I was hoping there might bo a "how to" book on the market. Something basic.

Not that I know of. Plus the technology has jumped by leaps and bound over the last five years. John FInch is getting deep into FE's. We'll get him to write a book. LOL!!!
